I think Pink Gold Peach being the ultimate rank is better than Red Yoshi because it's funny and Red Yoshi sounds like they couldn't think of anything to put after Yoshi (I think Super Mario would have been a good idea, but whatever).

I feel we need a few more in-between ranks because the gap between some of the ranks are ridiculous. For example, going from King Bowser to Dry Bowser is a very steep increase, going from 50 posts required (Bowser Jr. -> King Bowser) to 2000 posts required to rank up. So in this case, a "2000+ posts rank" should be added. So a simple proposal could be done:
950+: Birdo
1000+: Bowser Jr.
2000+: King Bowser

(Yes, last I checked, Birdo wasn't part of the rankings)

I think the max intervals between rank should be 5,000 posts, not 15,000 posts.
