Just like Pikachu, which is originally 「ピカチュウ」, but it could have been 「ピカチュー」 as well, which both get romanized into "Pikachuu" (with 2 U's at the end).
Or a better example: Yoshi.
It's 「ヨッシー」 in Japanese, but when romanizing, it says, "Yosshii".
Japanese names are always based on something, as an additional note.

Well, the romanization of Yosshii is infact "Yossy", but I think one " シ" would have been sufficient.
