I didn't like Sonic Racing Crossworlds that much and I don't really play racing games other than Mario Kart, but when I was younger I liked Cars: Race O Rama on the Wii. I guess otherwise you could count the racing minigames in Madagascar 2 Escape Africa on the Wii too. I mean, it's not karts but it's racing.
 
I used to have Cars Mater-National, which was about the only non-MK racer that I had at that time. Unfortunately, one time while playing it it messed up the family Wii and my brother was so convinced that it was cursed that we didn't touch it again.

These days, my go-to is Sonic Robo Blast 2 Kart (yes, I know Dr. Robotnik's Ring Racers exists now). Easy to pick up, hard to master. Especially on hard speed lol.

EDIT: I just remembered I also had Spongebob's Boating Bash, on both Wii and DS. But I liked Wii better.

Sonic & All Stars Racing Transformed, Sonic Racing: Crossworlds, Cars 2, Sonic Robo Blast 2 Kart, The Karters 2: Turbo Charged, Cars 2, and Blur are my favorite of the games. In Blur's case, not really of a "kart racing game" but it has a similar "item" system like Mario Kart, it's just that you're driving in cars.

Crash Team Racing Nitro Fueled I would have recommended if it weren't for the awful microtransactions.
 
I'm not sure if Diddy Kong Racing counts as a non-Mario game. It's definitely not a Mario Kart game. So I would pick that one as my favorite. Besides that it would be Kirby Air Ride/Riders. I haven't played any other kart racing games besides Mario Kart. I would like to play Cars for the Gamecube someday.
 
I keep forgetting about Diddy Kong Racing. It's a great game for sure, but it has certainly aged pretty badly imo.

srb2k is also very cool, especially with the modding support. I really like the mod that just let's you play as normal srb2 sonic and exploring the courses and trying to parkour to places that I never should have been able to get to. I have spent hours doing this, you would not believe the how fun this was for me.

Oh yes. The frame rate is pretty choppy. I played so much of the game that my brain got used to the frame rate, and when I wasn't playing the game, my brain would make real life choppy. It was bad...
