Actually, in the games, we actually see that Yoshi's eggs usually hatch into either baby Yoshi's or adult Yoshi's (however that works).

Overthinking this a bit, perhaps full-grown Yoshis can generate an egg to protect themselves, which seems to be the implication in a few games (like Super Mario Galaxy 2).
