Like this thread for Mario's designs, but about the Yoshis'.
There's already a meme about the lidded, long-necked SNES design being replaced with an impersonator named Josh, and Nintendo has recently been vacillating between elements of the two designs. So I expect that alone could be an interesting discussion.
I think one of my personal favorites is the Yoshi's Island sprite. The Yoshis in that game are really nicely stylized, and the white countershading extending under their arms and hands makes them all the more adorable.
