This is what I've found and jotted down so far..
1) There's a hidden path from Piranha Plants on Parade (will explain how to unlock it tomorrow if no one else does), takes you south to a secret pipe leading to a preview of the beach world, and a path to Captain Toad who gives you 50 flower coins!
2) in the first open area, if you run through the bushes they'll give you coins and at least once a flower coin.
3) in the open area north of the first open area, to the top left there's flat stones shaping a bullseye, jumping in the middle of it grants a flower coin/regular coin.
4) again in the same northern open area, there's a hidden pipe in the top right behind the tree & cloud. It takes you to a sneak peak of the snow world, along with a path to Captain Toad, who grants you 50 flower coins.
5) east past the first open area, in the south pipe that takes you to the poison lake underground forest, there's a pipe to the right obscured by the trees, this takes you to a sneak peak of the lava world, and once again a path to Captain Toad who grants you another 50 flower coins.

1) watering the grass repeatedly with trunk spray will grant a handful of coins, it eventually will stop giving coins for the rest of the course.
2) hitting a shell repeatedly with your trunk and not letting it touch the ground, it'll eventually explode into coins.
3) in Scram, Skedaddlers! If you hit the fruit Skedaddler shoots with your trunk, they will launch a faster one, this goes on until you hit the fastest fruit they shoot, and it explodes into coins. (I'm putting this in general for now in case Skedaddlers appear in other courses)

Hidden 1-up mushrooms
1) after the first pipe you can walk into, there's two sleeping goombas, jump directly up from just right of them and there's a hidden block containing a 1-up mushroom.
2) if you skip the Wonder effect, there's a green pipe by its lonesome to the right of a fountain, it'll take you to an underground area, one of the question blocks has a 1-up.
Hidden flower coins
1) after the second 10coin on top of the tree, there's a talking flower, jump up from the flat of the hill right of the talking flower, a hidden block will reveal the games first propeller flower, taking you to a cloud with a brick, hit the brick and the cloud will become coins and 1 flower coin.
2) at the aforementioned fountain, there's a dehydrated flower, water it with elephant spray and it'll grant a flower coin.
3) In the underground area, if you enter as an elephant, you can spray flowers to grow vines that take you to a flower coin.
Hidden power ups
1) jump up from the top of the first fountain, there's a hidden block containing an elephant fruit.
2) right of the pipe that takes you underground, is 3 bricks and 1 brick above, the 1 brick contains a star, there's a row of goombas shortly up ahead that will grant you a 1-up.
