Oh, here we go: Fawful, Dimentio, Super Dimentio, Dark Bowser, Dark Fawful, Dark Star Core, Count Bleck, some of Bowser's appearances (only when he's interesting though), Mr. L, both Brobots, Grodus, Shadow Queen, Doopliss, Tubba Blubba, General Guy, Big Bob-Omb, Hooktail, Fracktail, Dino Piranha, Petey Piranha, Cackletta, Bowletta, Cackletta's Soul, Goomboss, King Boo, Koopalings (in Super Mario World, the only older game I played with them, don't really care for them in NSMB games), Chief Chilly, Francis, a lot more I'm too lazy to put down
 
Princess Shroob, Count Bleck, Bowser in all Paper Marios (except in the one we don't speak of), Petey Piranha, Cackletta, Grodus, Dimentio, Cortez, Lava Piranha, Mr L, O'Chunks, Mimi, Doopliss. Probably more but that's it for now.
 
Baby Bowser in Super Mario World 2: Yoshi's Island, but only after he's grown first part is too easy and boring
 
Fawful, Bowser, Dark Bowser, Macho Grubba, Cortez, Petey Piranha, King Boo, Mimi, O'Chunks, The Axem Rangers, Rookie, Bouldergiest, Megahammer,and Whomp King.
 
Nothing beats the Dark Bowser fight. That was absolutely the best boss fight I've ever had in a Mario game.

That music... So epic as hell.
 
I liked the final Bowser fight in Super Mario Galaxy. Don't care much for his other fights in other games.
I also liked: Petey Piranha, King Boo (or Boss Boo; the Super Mario Sunshine one), Bouldergeist, King Kaliente, Bob-Omb King (N64 version), Whomp King, Prince Froggy, Hookbill the Koopa, and Baby Bowser.
 
I truly like Super Dimentio, Midbus, and Dark Bowser.
 
I usually like the best bosses, Bowser, Hooktail, Gloomtail, and Bonetail. ;D
