NGC Mushroom Bridge
NGC Daisy Cruiser
NGC Sherbet Land
Wii Mushroom Gorge
Wii DK Summit (DK's Snowboard Cross)
Wii Koopa Cape
Wii Grumble Volcano

MKWii's retro courses were pretty weak, especially the ones from Double Dash.

I personally like Mario Circuit and Waluigi Stadium.

If I were to pick 4 more from Double Dash, I would pick Wario Colosseum, Dino Dino Jungle, Mushroom City, and Bowser Castle.

You also mentioned Mushroom Bridge but that was in MKDS.

Also, I bet they'll bring back Mushroom Gorge.
 
Waluigi Pinball, Mushroom Gorge, Moo Moo Meadows, Yoshi Falls, Luigi's Mansion, Banshee Boardwalk, and Sky Garden, but especially Waluigi Pinball.
 
Yoshi Falls, Banshee Boardwalk, and Sky Garden have already been remade.
