Anything can be an instrument if you use your imagination. For the case of mayonnaise we can do some shenanigans to have it be a percussive instrument:
1) Rhythmically tap the lid on a mayonnaise jar.
2) If it's in a squeeze bottle it will likely make squirt noises when it's nearly empty.
3) If you get a spoonful and then throw it down somewhere it'll make a plop sound.
4) If mayonnaise is in a glass bottle, you can probably blow into it similar to the different levels of water trick. I'm not sure what sound it would make.
On it's own this wouldn't do much and it might make a mess and/or be a waste of mayonnaise to utilize it live, but if you create each sound effect and record it, then you could put it all together in software and congratulations you've got a beat made up from mayonnaise.
