OK, I'll tell you why I hate Daisy. I started to hate Daisy back in 2012 because I used to play games on the DS with one of my cousins (we loved playing Mario Kart DS and Mario Party DS), and she preferred Daisy over Peach. At first I didn't mind, but she would sometimes insult Peach and one time I even picked Peach for her and she refused to play as her. I thought to myself "Is Daisy a more popular character than Peach? Are there more people that like playing as Daisy than Peach?". I then started to dislike Daisy because the thought of her being more popular Peach didn't really sit well with me. Peach is one of the main characters and is the lead female character, how can she be less popular than Daisy who only really appears in spinoff games? I know that this might seem like a silly reason to start hating a character...
Then at around the time Mario Party 10 came out back in 2015, I actually stopped hating Daisy and I once again enjoyed playing as her in the spinoff games. This didn't last very long though, and by 2016 I was already back to hating Daisy. I've read many of memoryman3's posts on GameFAQs, and I think that he might be part of the reason why I don't really like Daisy anymore.
Right now there are three main reasons why I dislike Daisy: her fanbase (well, it's mostly memoryman3), the thought of her being more popular than Peach, and her personality. I don't really like her personality because I prefer female characters that are sweet and polite, and Daisy isn't really like that. I don't like how she often taunts her opponents, like how she says "Haha" when passing you in Mario Kart or in Mario Party Star Rush's Coinathlon, and I'm also not really a fan of her taunts in Mario Golf: Toadstool Tour. I know many people like Daisy because of her personality and they like that she isn't so sweet and nice, but that's exactly why I don't like her.
As for why she's in my sig, well someone else made that image and they decided to include the four playable female characters from the Mario & Sonic Olympic games. I know that I could edit that image and cross her out or something, but I prefer to just leave it as it is.

Also, fam, Daisy is never going to be more popular than Peach. Ever. Like, for example, it took *years* until Daisy finally got an official plushie by San-ei, even dumb Baby Luigi got a plush first, took until just last year for Baby Daisy to get an official plush, and this is one of the many, many, examples of how she'll never even dream about surpassing Peach in popularity. Super Mario-Kun doesn't even feature Daisy in any capacity.
Yeah, on social media, you're going to find loud, obsessive weirdos like memoryman3 who take their obsession of a video game character and spin out astronomically out of proportion, as well as the entire existence of WeAreDaisy, but outside of the loony internet and Mario Kart Wii, Peach is the more played character, simply because she's got more appearances, more merchandising, and she's generally much more relevant to the Mario franchise than Daisy ever will be. Daisy owes her existence to Peach, and it's extremely disrespectful to downplay her in favor of Daisy.
Besides, Daisy likes Peach. The two go together. They don't need to be rivals. They're characters who would happily bake a cake together.
You know, I don't even dislike Peach at all these days. The bad memories of Mario Kart 7 are fading away slowly, being replaced by funnier memories like in Super Smash Bros. Ultimate or Mario Kart 8 Deluxe's battle mode, so I'm starting to be all right with her again.
