If you ask me, Partners In Time was skipped simply because they'd have to make loads of new sprites for Mario and Luigi carrying the babies, plus the babies's sprites and everything else.
Basically the SS and BIS remakes only exist because the assets are already there so they can cash-in.

Another thing I'd love to see more of are those potential Persona spinoffs that Atlus registered domains of not long ago. Not sure if it's too soon but I want to see whatever they are

oh and that Mario Odyssey has been confirmed to have a playable demo (expected yes, but Reggie actually confirmed it)

I have the Mario 25th booklet, it was nice...
But I'd love to see a Hyrule Historia-esque book full of Mario art, from the main games, Kart, sports games, RPGs, and the other spinoffs... That'd be really cool
For 15 years or so, the answer to this question was, without a question, Super Mario 64. That was the game that made me enthusiastic about gaming in the first place, and no game ever had the same feeling.
A mere few months ago, though, my answer changed, it's now Persona 4. Maybe...
