Yeah my headcanon is that Mario Kart etc. aren't really canon to the events of other games. This is why I disagree with the idea that characters who passed away, such as

Fawful and Antasma

shouldn't be in Mario Kart, because Mario Kart clearly isn't meant to take the continuity of other games seriously.
