I don't know why, but I really like the one from Mario Kart DS. Might just be nostalgia because MKDS was my first Mario game ever, but I do really like it.

Sticker Star and Strikers Charged's themes sound great.
 

probably the super mario land version actually. has nothing to do with the regular starman theme but i liked that one lol.
 
The Wing Cap/Vanish Cap/Shiny Shell theme from Mario 64. With the Powerful Baby theme from Yoshi's Island running a close second.

probably yoshis island one, its the one i remember the most anyway.
